Hi. This is Michael Ballon from the Castle Street Café and today we're going to be making classic Bolognese sauce for pasta. And we're making it a little special with the use of grass fed beef which you'll see is low fat and perfect for making sauce. You'll need a pound of cooked fettuccini to start. And then in a skillet brown a pound of ground beef and mix it well until it's thoroughly browned, drain and discard the fat and save the beef. If you're using grass fed beef you'll notice that there isn't nearly as much fat as there is commercial beef. In a separate pan brown some onions in a little olive oil and then add some bay leaf, fresh basil and garlic. Let it cook 1 minute and then add the can tomatoes, ground beef, salt and pepper. Let this tomato and beef mix simmer for 30 minutes and then stir in the Parmesan cheese. When you're ready to heat the fettuccini up toss with the sauce and serve immediately. Bolognese sauce, if it's made with grass fed beef is really healthy and delicious and has way less fat than commercial beef and it's a perfect use of the drier lean beef.
