Hi. I'm chef Michael Ballon from the Castlestreet Café. And today we're going to make smoked salmon rolls with ricotta cheese. It's really easy dish to make. It's a great cocktail hors d'oeuvre and we're going to use real Scottish smoked salmon which is a fabulous dish. In a mixing bowl combine the ricotta cheese, the scallions, minced carrots and minced red pepper and mix well. Take the smoked salmon slices and carefully separate them and leave them out on a flat work surface. Spread about a tablespoon of the ricotta cheese and vegetable mix over the top of each slice and spread it out smoothly. Roll the piece of smoked salmon up like a jelly roll and cut into piece so it's bite size and serve chilled as an hors d'oeuvre. And if you're using low fat ricotta cheese this is a very healthy dish to make. There's practically no fat and with the spinach inside it's packed full of vitamins.
