Hello, my name is Chef Ben Diaz, and today I'm going to show you how to use eggs and cheese in an enchilada. The reason is, it's a great, simple dish for any and all occasions. Especially for breakfast. So first we're going to take our pan and we're going to spray it with non-stick spray. Set that aside. Next we'll take about 6 tortillas, dip them in 350 degree oil for about 10 to 30 seconds. Next we're going to remove them from our oil and let them drain for another 30 seconds to 1 minute. Next in a large mixing bowl mix in 1 cup of cooked shredded chicken, followed by 1 cup of nacho cheese sauce, and finally 2 cups of hard boiled cooked eggs. Only use the white portion. next we're going to mix our mixture smooth. Next we're going to take 2 tablespoons of our mixture and add it to each one of our tortillas. Finally we're going to roll them up closed. They should resemble small crepes. We're going to line them all up and add them to our pan. Next we're going to add 1 and 1/2 cups of creamy ranch dressing. Finally we're going to take our pan and put it into a 350 degree oven for about 20 to 30 minutes. What you have are great, simple chicken and egg enchiladas for any and all occasions.
