Hi, my name is chef Ben Diaz. And today I'm going to show you how to fix enchiladas using soft burrito shells. The reason is most people tend to overcook or under cook enchiladas and they break open. There's a simple and easy way to fix that. So first off here's our enchiladas that we actually overcooked and they busted open. Next we're going to set that aside and take a 12 inch flour tortilla. For example here I'm using a spinach tortilla so you can see the difference. First I'm going to score off the tortilla by cutting off the edges. Next we're going to cut our tortilla into about two strips equal length. Turn them over, stack them, then we're going to cut them again till we get four equal pieces. Finally what we're going to do is layer our enchiladas. We're going to add one piece of our tortilla overlapping the other. Repeat this process two more times. Next we're going to add one cup of shredded cheese and what you will have are enchiladas that are ready to back at any moment. Remember only bake for 10 minutes this time.
