Hi, my name is Chef Ben Diaz, and today I'm going to show you how to make a chicken enchilada casserole with cream of celery soup. The reason is it's a great, simple dish you can do for any and all occasions. Especially a great summer day. So first we're going to take our nice, small pan, spray it with non-stick spray. Next we're going to add about 3 tortillas inter-laying each other. Make sure you use 6 inch corn. This is followed by 1 cup of diced, cooked chicken. 1 cup of shredded cheese followed by 1 cup of micro-cilantro mix. Finally we're going to add 3 more tortillas on top. Next we're going to add about 3 cups of our cream of celery soup. Finally we're going to take our pan and put it into a 350 degree oven for about 20 to 30 minutes. And what you have is a great, simple, delicious dish for any and all occasions.
