Hi, my name's Chef Ben Diaz, and today I'm gonna show you how to make a crunch nacho cheese and chicken casserole. The reason is it's a great dish for any and all occasions, especially game time. So, first, we're gonna take our pan and spray it with non-stick spray, set that aside. Next, we're gonna take six tortillas, dip them in 350 degree oil for about one to two minutes to get nice and crispy, resembling hard tortilla chips. Finally, we're gonna remove the tortillas from the oil. Let them drain for about 30 seconds, to one minute, depending on your temperature. Next, we're gonna add two of our crushed tortilla chips to the bottom of our pan, followed by one cup of our diced, cooked chicken, followed by one cup of shredded jack and cheddar cheese. Next, we're gonna repeat this process one or two more times, depending on your preference. Finally, we're gonna add about three cups of our nacho cheese sauce, the top of our mixture. We're gonna take our pan, put it into a 350 degree oven for about 30 minutes, to 45 minutes, depending on your temperature. And, what you'll have is a great, crunchy, nacho cheese enchilada.
