Hi, my name is Chef Ben Diaz, and today, I'm gonna show you how to make a low-fat taco casserole with ground chicken, sour cream and cottage cheese. The reason is this is it's a great, simple, low-fat dish for any and all occasions. So, first, we're gonna spray a non-stick pan with some canola oil, just to make it smoother, set aside. Next, we're gonna take about seven tortillas and dip 'em in 350 degree oil for about five, 10 seconds. Next, we're gonna let them drain, gently, over a rack for about 10 to 30 seconds. Now, in a large mixing bowl, we're gonna add one cup of cooked chicken, diced, followed by one cup of sour cream. Next, we're gonna mix our mixture. So, next, we're gonna add two tortillas to the bottom of our pan, followed by one quarter of our mixture. Repeat this process one more time. Finally, on our last layer, we're gonna add three tortillas, followed by one cup of cottage cheese. Next, we're gonna take our pan and put into a 350 degree oven, for about 20 to 30 minutes, depending on your temperature. What you have are great, simple, low-fat enchiladas for any and all occasions.
