Hi, my name is Chef Ben Diaz, and today I'm going to show you how to make chicken cheese enchilada sauce with flour tortillas. The reason is this makes a great dish for any and all occasions. Especially great summer days. So first we're going to spray our container with non-stick spray. Next we're going to take our flour tortillas, dip them in 350 degree oil for about 5 to 10 seconds. Next we're going to remove our tortillas and let them drain for another 10 to 30 seconds. Next we're going to take 2 tablespoons of cooked diced chicken, put it inside our tortilla mix. Roll them up simply just like a crepe and we're going to lay them into our pan. You should continue to do this about 6 to 8 more times depending on how many tortillas you like to use. Next we're going to add about 1 cup of green enchilada sauce, followed by one cup of shredded jack and cheddar cheese. Finally we're going to cover our mixture with plastic and foil, place it into a 350 degree oven for about 20 to 30 minutes depending on your temperature. And what you'll have are great cheesy chicken and cheese enchiladas for any and all occasions.
