Hi, my name is Chef Ben Diaz, and today I'm going to show you how to make Mexican casserole with shredded chicken. The reason is it's a great dish for any and all occasions. Especially great summer days. So first we're going to spray our pan with non-stick spray. Next we're going to layer a small layer, about one cup of toasted tortilla chips. Next we're going to add one cup of shredded chicken, next we're going to add another cup of our crispy tortilla chips, followed by one cup of shredded cheese. Next add one cup of crispy tortilla chips, next three tablespoons of salsa and finally one more cup of shredded cheese. Next we're going to cover our mixture with foil and place into a 350 degree oven for about 20 to 30 minutes, depending on your oven. What you'll have are great, crispy, chicken enchiladas.
