Hi, my name is Chef Ben Diaz. And today, I'm going to show you how to make buffalo chicken enchiladas with creamy ranch sauce. The reason is these are great simple enchiladas you can do on any day or weekend for any and all occasions. So, first, we're going to take our tortillas, dip it in about 300 degree oil for about five to 10 seconds. This will loosen them up. Next, we're going to let them drain for about 20 to 30 seconds. Next, in a large mixing bowl, we're going to add one cup of cooked chicken, diced. Followed by two tablespoons of buffalo sauce, one-quarter cup of creamy ranch. Next, we're going to mix our ingredients together. Finally to portion out our enchiladas, we're going to take one tortilla that's already been soaked and drained and put two tablespoons of our mixture. Gently roll using your two hands, it should assemble a small crepe. Next, spray your pan with nonstick spray. Lay your enchiladas one at a time. Finally add one cup of shredded Jack and cheddar cheese and cover with aluminum foil. Place enchiladas into 350 degree oven for about 20 to 30 minutes, depending on your oven. You'll have a great, simple, creamy buffalo style chicken enchiladas for any and all occasions.
