I'm a Dirty Chef Ian Russo, I'm gonna show you today how to truss and also tuck chicken wings underneath the chicken. By doing that the chicken's gonna be a lot crispier and the wings won't burn. As you can see if you don't do anything with these wings they're gonna stick out, they're gonna burn, they're a lot thinner and it's a very simple process you just turn them around and they go right under the chicken. What I'm gonna do is I'm gonna take butcher's twine and tie the chicken up so that it'll cook a lot even, a lot more even. I just grab it from the front. It's not really that complicated of a process you just really trying to tie the legs together. I have it closed in. I'm gonna go one more time around and just tie a knot and then what we have here is a perfectly tied chicken for roasting.
