I'm The Dirty Chef, Ian Russo. I'm going to show you how to make a unique burger sauce today, the classic Tataki sauce. We're going to kick it up a little bit and make it a Dirtiki sauce. It's one ounce of chopped garlic, two and a half pounds of Greek yogurt, four ounces of lemon juice, one teaspoon of dirty spice, one teaspoon of salt, one teaspoon of white pepper, a teaspoon of garlic powder, a half a teaspoon of onion powder, two cucumbers finely diced, one small onion diced. And it's a very simple recipe. All I'm going to do is mix all the ingredients together and as long as you measure properly, it will be very hard to change this recipe up. It's black pepper, lemon juice, dirty dust, the diced cucumbers and then all I'm going to do is mix it all up and you can see it's very fresh, it's light, there's cucumbers, lemon juice, yogurt and it's really delicious with a lamb burger, hamburgers, salmon burger, even a tuna burger. There's enough ingredients in here that when you put it on the bun and you add the meat whether it's tuna, lamb or beef, the burger pops in your mouth because the sauce has so much flavor. If you were to try this sauce outside of the burger, it's going to have a lot of flavor in it but when you add the bun and the meat, it loses a little bit. That's why we season it with a little bit extra of all the ingredients.
