Hi, I'm the Dirty Chef Ian Russo. This is how to make chargrilled chicken wings. There are few key points. If you chargrill a chicken wing from a raw state, it tends to burn on the grill. So, what I like to do is simmer the chicken wings with a little bit of salt water for eight to 10 minutes. The chicken doesn't have to be totally cooked, but cooked enough that when it goes on the grill, you're not starting from the raw state. So, I'll simmer it in salt water, take them out, put them in the fridge for at least four to five hours, so it's nice and cold. Then, I'll toss the wings in whatever kind of spices you'd like, then they go right on the grill. This way they get nice and crispy, the skin gets crisp up and you don't have to worry about your chicken burning before it's cooked.
