Hi, I'm the Dirty Chef, Ian Russo. I'm going to talk today about how to deep-fry chicken wings. A, a few key points is that the chicken wings need to be dry, the oil temperature needs to be at 375 and on most fryers at home, there's a oil level where the oil should be. You don't want the oil to go passed that. If you do, then the chicken wings don't tend to be as crispy because the water takes a longer amount of time to rise to the top and it's making the wings soggy. So, the trick is making sure the wings are dry, timing the wings that's usually eight to 10 minutes and pulling them out of the basket when they're done and then tossing it in a bowl in the sauce of your choice.
