Hi, I'm Paul Malvone. Today, we're gonna be making a truffle aioli burger. Truffles are very aromatic and give a very sophisticated taste to your burger. In a blender, mix three garlic cloves, one teaspoon of Dijon mustard, two egg yolks, a pinch of sea salt, half of a fresh lemon, squeezed, and blend until smooth. Mix together two ounces of truffle oil, with four ounces of extra virgin olive oil, and slowly add to the blender. Blend all the ingredients together until the aioli becomes slightly looser in the consistency of mayo. To prepare our caramelized onions, in a sauté pan, add one medium sized chopped onion, quarter cup of butter, one soft bouillon cube, and cook until golden brown. In a bowl, use eight ounces of ground beef, one teaspoon of all purpose seasoning, mix together, and form your patty. Place your patty on the grill, and cook four to five minutes on each side, until 155 degrees. Top with caramelized onions and two slices of smoked cheddar cheese. To prepare your toasted buns, add a half a teaspoon of butter to each half, spread evenly, place face down, on the grill, or a sauté pan, until golden brown, approximately 30 seconds. When you're ready to serve the burger, place some mixed field greens on the bottom bun, spread your aioli, evenly on the top bun, place your burger, serve with steak fries or your favorite side dish. The strong flavor of the truffle aioli will go great with your favorite lager.
