Hi, I’m Maria Vieages. How about a chicken breast with some tomatoes and feta? Okay, we have some olive oil here – not extra virgin olive oil, just regular olive oil – and we are going to put a little bit in the skillet – probably about this much. We’re going to salt and pepper our chicken breast – don’t be shy! Salt and pepper it. The pan is hot – see how it’s smoking? That’s what you want. Put it down. Now, we have this side up, it’s unseasoned. Going to use the other hand, because remember, this hand touched the chicken. So, we want to use the other hand. Salt, pepper. We’re going to let that brown for a little bit. We’re going to flip the chicken breast over, brown it a little bit on the other side. Then, we’re going to move it to this baking dish and put it in the oven to finish. So, this is what we have left in out skillet that we seared the chicken. You have some of the olive oil, some of the salt and pepper that’s in there. And, when the chicken got brown, you have those pieces, which is really good. And, we have some diced tomatoes, and they’re going to go in the skillet. Loving that! Then, we’re going to take some white wine, we’re going to pour that in there. We’re going to throw a handful of garlic in there. So, this is what you want your tomato mixture to look like. See? You want some of that moisture to cook out, but you want it to get kind of thick. See? It’s thick and the tomatoes are soft, see the garlic in there? And, it’s really, really good. And, you’re going to crumble some feta in there – you don’t want to do too much at first, because it’ll melt. But then, that’s okay too. Then, you’re going to take some spoofuls of this, you’re going to put it down on your plate. Oh, God! See, if you don’t care about carbs, I’d have a big old bed of pasta under there. Then, we’re going to put a little bit more feta – can you tell I love feta? Then, we’re going to take our chicken breast that we finished in the oven, 400 degrees, and it went about 25 minutes. Let people think you’ve been in the kitchen all day doing this.
