Hi, I'm Maria Vieages. And guess what we are going to do today? We are going to roast an onion in the oven. So the first thing I'm going to do is take a large onion. And I'm going to quarter it. And make sure the peeling is off. Keep the root end on so it stays together. And then we're going to take some olive oil and we're going to drizzle the olive oil over it. And a little salt. A little black pepper. Some thyme, fresh thyme. You can use dried thyme. The whole thing or you could just use the leaves. And then you are going to toss it. We are going to make a tent. And that's it, it goes in the oven. So that's your finished product of roasting an onion in the oven. It comes out like an onion confit. And confit is, it gets brown and soft. And the sweetness comes out. And it's the bomb.
