Hi, I'm Maria Vieages. We're going to make an eggplant, yogurt, garlic dip. Yes. What we have here is we have this little old shriveled up eggplant that looks terrible. But the reason why it looks like this is because it was roasted in the oven whole. And the reason why we did that is because we are going to cut it down the side. And we are going to get all the inside out. And the inside is going to be part of the dip. Then we go to the food processor and we finish it. We're going to squeeze a half of a lemon in there, the juice of a half of a lemon. And we are going to take some Greek yogurt. This is a cup, I would not add a cup cause you can see you don't have much eggplant mixture in there. And I think the more Greek yogurt you add it becomes tart. And I don't really like it tart like that. We are going to add a little salt and then we are going to add some cayenne pepper, not black pepper. Then what we are going to do is we are going to put the top on and we are going to turn this on. This is a consistency you want. You want it smooth and you don't want it too thick but you don't want it runny. You want it to coat the back of your spatula. So when you dip pita bread or vegetables in it it will stick to it. Here's your eggplant yogurt dip. It's got a lot of garlic bite to it. It's a really healthy dip.
