Hi, I'm Marie Vieages, and today I want to talk to you about soaking eggplant in milk and then using it for recipes and why you soak it in milk, there are a few different reasons. So I have some eggplant slices here and you can see, they have been soaking in this bowl of milk for probably about an hour or so and what I did was I weighted this down with another bowl or a plate so they were all submerged and then that's going to pull the bitterness out and it's also going to coat them. So we have the eggplant slices soaked in milk and then we just have some flour and we have a little sugar in the flour, just a little bit of salt, not too much and then we have some canola oil, heating. We want these to be submerged and it's really, the oil is hot as you can see. So we're going to work quick and we're going to put these down. Okay so let's see where we are with these oh yeah, see that's what you want it to look like. You want them to be brown. We're going to put them on some paper towels to drain and we'll let them drain for a few minutes but we don't want them to get cold. Okay, so here's the last part. These are really nice, they are drained, see they are dry, they are not greasy and then we're going to take some local honey. We're just going to go right around with the honey and those are your eggplant fritters.
