Hi, I’m Maria Vieages. We are going to make feta and tomato bruschetta. Alright, so, I’m going to show you how to dice a tomato for bruschetta, because all bruschetta is diced tomato, a little garlic, salt, pepper, and olive oil. So, the next thing we’re going to do is we’re going to take a little extra virgin olive oil – some people don’t do this, but I love olive oil! I love olive oil – I can’t get enough of it! And, drizzle a little bit in there. We’re going to take some raw garlic. You can take some roasted garlic if you want to roast garlic in the oven and use it – it’ll be more mellow. Then, we take a little salt, and we take a little black pepper, and some basil ribbons. As you see, tomato and basil go incredible together! And then, we mix it up. And, the longer you let it sit, the better it’s going to be. So, we’re going to use this focaccia. Put some olive oil – extra virgin olive oil – do not be shy, because it’s really good stuff. Then, we’re going to take the tomato/bruschetta mixture. Now, this is tricky. You want to do this. You know it’s going to fall off – I mean, you just have to be really careful with it. So, here is our tomato and feta bruschetta, and it’s on focaccia, just came out of the oven, cut some more little fresh basil ribbons. You’re ready to eat!
