Hi, I'm Maria Vieages and we are going to do baked eggplant with mozzarella and tomatoes. So this is really easy to make. What I did, take one eggplant and you slice it into rounds like this. And then you take a tomato or two depending on how high you want to go. And you slice those into rounds, into slices. And then you get a log of fresh mozzarella. Don't get well you can get the shredded mozzarella if you want. But this is so much better. I mean it makes a ton of difference. And you slice across it all the way. Cause you can never have too much cheese. See so now we are ready to assemble. So we have one eggplant round. And this is some extra virgin olive oil. And we are going to put it around there. And the eggplant is going to absorb the oil. See how it's already absorbing it. Now we are going to do a little salt, a little black pepper. And we are going to put a slice of cheese. And then we're going to put a slice of tomato. And this is just me because I like to have it really rich. So here are our little tomato stacks and they're going to go into a 400 degree oven for probably about maybe 20 minutes. We'll check them after 20 minutes to see how they look. Okay so this is our tomato, eggplant stack. It just came out of the oven and the cheese was just running out, the mozzarella cheese. So I took some of that that was coming out and I put it on top. Put a little fresh basil and put it on a bed of spinach. It's ready to go.
