Hi, I'm Joseph Yacino, YaDa Chef. And today I'm going to show you how to make a fruit tart base. A few things you are going to need. You are going to need one cup, 124 grams of flour. Three ounces, that's about 85 grams of unsalted butter. You are going to need a pinch of salt, half a teaspoon. Another pinch of flour. Three tablespoons or so, maybe four of iced water. It's important that it's ice cold. And you also need one ounce, one tablespoon, 30 grams of shortening. This is easy as pie. We're going to add the flour and your butter into your food processor. With the salt and the sugar. And you take it out and we're going to do it's a little bit of a French technique. We're just going to make sure it all comes together. You can wrap it in cling film, you can wrap it in parchment. You can wrap it in wax paper. Just want to put this in the fridge for about 15 minutes to cool it off. And then we'll form the tart shells. Okay the dough has been resting in the refrigerator. It's cool now. And I am just going to rather then using a big tart pan just going to cut this up and divide it up into portions. And then using my hands we're just going to push this down into your molds. And then these will go into a preheated 375 degree, it's about 190 Celsius degree oven. We're going to poke these with fork to prick them with a fork. Blind bake them for 15 to 20 minutes. So I just took the cake, the pie tarts out of the oven. And this is the finished product. I put a little crème patisserie and some fresh fruit in them.
