Hi, my name is Maria Sparks from Cork and Platter, and today we're going to talk about Serrano peppers and the best way to keep them fresher longer. I have two methods and the first one is the refrigerator method and don't ever wash your pepper. The peppers have a natural oil on them and we don't want to get rid of those. That's the thing that will dry them out and they won't last as long as you like them to. If I could give you one piece of advice is to wear gloves when you're working with any hot pepper. You'll thank me later. So, what we do when you're putting in, in the refrigerator is I'm sure a lot of you tend to put them in the Ziploc bag and put them in the crisper and that's the worst thing that you can do. It's almost like a mushroom. You put them in a paper bag and before you put them in the bag, you actually wrap them individually in paper towel and place them in the paper bag and use them as needed. And that will give your peppers another at least two weeks worth of freshness. The second method is the freezer method and what we do is take the pepper, you're going to split it in half lengthwise, de-seed it and take off the stems. Then, you're going to put them all in a Ziploc bag and take the air out as much as possible and put them in the freezer. And that will give you at least six months worth of freshness.
