Hi, my name is Chef Maria Sparks with Cork and Platter, and today I'm gonna show you how to make a bell pepper dip with mayonnaise. This is one of my favorite go-tos and I use it for a couple of different things. I make it with roasted red peppers, and I use it for a dip for veggies, or crudite. I also make an amazing duck quesadilla, and I use that as my dipping sauce, with some cilantro. And, then, I can also use it when I make a pasta, and it's kind of a creamy sauce that I make and I toss it with a little bit of crispy pancetta, and some little pasta, some peas, and shallots. So, today, we're going to make everything in a blender. If you don't have a blender, you can use a Robuku, or a food processor, and if you don't have that, you can use one of those hand mixers, and mix it in a bowl. So, what I like to do is first, roast my pepper. You can also get roasted peppers now, these days, at the grocery store, in a can, or a jar, or at your favorite deli. I chop them up a little smaller than the size of your thumb. I put them in the blender, and then, I add a little bit of mayonnaise. I would say, about a cup of mayonnaise to two peppers, and then I add two cloves of garlic, and I start it on low speed, and then I bring it up to high speed until the dip is nice and creamy. It's okay if there are a few little chunks, but I like it to be really smooth. As smooth as possible.
