Hi, my name is Chef Maria from Cork and Platter, and today I'm going to teach you how to remove the skin from a capsicum pepper. The first thing we have to do is roast the pepper. And how I like to do it is on an open flame. So, what I do is take the pepper and I don't put anything on it. It's just plain; no oil, salt and pepper and I put it directly on the flame. Make sure you use tongs or if you're camping, you can put it on a stick like a marshmallow. And you're going to put it directly into the flame. It takes about 10 minutes and you're going to rotate it a quarter turn, maybe every minute and you'll start to see a charring happening, but you don't want it to totally over burn anyone spot because it will damage the pepper on the inside. What you're going to see is you're going to see an ash-like coating and that's the skin bubbling and peeling away from the pepper. And then what we do is we take the pepper and we put it into some sort of sealed container that will help the pepper sweat. So, you can use a piece of plastic, Tupperware or a bowl with a lid, even a Ziploc bag works really well or wrap it in plastic wrap. And you're going to let is sweat for about another 10 minutes. And then, once that's done, the skin is going to easily pull right away from the pepper and what I personally like to do is if I put gloves on my hands and then I just pull the skin off, it comes easily away or if you don't have gloves, you can use paper towel and just brush away the skin, kind of like the way you would clean a mushroom and the skin will come right off and this beautiful red color will come through on the pepper and it will actually change the flavor of your pepper as well. It will give it a smoky roasted flavor. It's amazing and delicious.
