Hello, everybody. Welcome, my name is Neil Fuentes and this is Latin twisted dishes with Neil Fuentes. Today you are asking about cooking some plantains with cinnamon. I have the perfect recipe for you. And it's called Fufu. Fufu is a sweet plantain dish we make in our country such as Venezuela, Columbia, Ecuador, etc, etc. That is basically fried sweet plantains with a little bit of bacon. Because everything taste better with bacon. And a little bit caramelized onions in there. Basically what we are going to do here, the first step is to grab some bacon. And bacon we are going to render the fat. What is rendering the fat mean? We are going to grab that bacon and we are going to fry it in here and all the oil is going to be released from there. Once the bacon is crispy we take it out of the pan and we leave all the fat in the pan. And then we are going to grab our onions and we are going to cook them in that fat. And they are going to caramelize with that baconish flavor that is absolutely amazing. In the meantime, while the onions are cooking we're going to dice our beautiful sweet plantains and we are going to fry them in a little bit of canola oil. We are going to put it in the side as well. Now that we have all our cooked items done then it comes the assembling time. Grab a bowl, add your onions, add your bacon, add your sweet plantain. To that you are going to add a little bit of Parmesan cheese, a little bit of butter. A little bit of salt and pepper. And then you are going to finish it up with the star of the dish with this which is the cinnamon. So ladies and gentlemen this is what we call Fufu and is one of my favorite Latin dishes that I like to make.
