Hello everyone, and welcome. My name is Neil Fuentes. And I am going to show you today, how to make paella Panamanian style. What is Panamanian style? Paella is actually a very universal dish, comes from Spain normally or Portugal. And we Latin American people have taken that dish and have made it in different ways. I'm from Venezuela. Colombians, Panamanians, we all have our different twists when it comes to paella. And I'm going to show you mine. Our ingredients here today, are onions, chopped, we have some chopped garlic as well. We have some saffron, we also have some bell peppers, southern pepper of course. We have a little bit of broth right here, made of clams, out of the clams. We have some frozen peas, of course, rice, paella, you need rice for your paella. And then, for our protein, we have several ones, we have a little bit of pork, we have some bay scallops, also some chorizo, some delicious lobster. Then we have some shrimp, some mussels and or course, some chicken here. We're going to be working with olive oil, a little white wine. I'm going to have a great dish. The first thing we're going to do is, we're going to grab a little bit of olive oil and we're going to warm it up in this paella pan. Once the paella pan is hot and we are in the smoking part when the smoke starts coming out of the oil. Then we're going to add onions, we're going to add garlic to that, we're also going to add the saffron. We're going to add the bell peppers, the peas, and the chorizo. We're going to let all that cook and get beautiful and gorgeous in there. Once they are cooked, then we're going to start adding out protein. We're starting with the chicken. I'm starting with the chicken and the mussels. So, this way they'll start cooking, they'll start working beautifully in there. And then, after that, we're going to start adding out shrimp, our lobster and our scallops. Once we do that, we're creating basically a soup. And once that soup is done, we're going to add the rice to that, we're going to mix it all and make it beautiful. It's going to go into a 375 degree oven for 45 minutes. And you're going to have an amazing paella.
