Hi, my name is chef Ben Diaz, and today I'm going to show you how to season a pernil. So the reason we're making this dish is simply because it's a great, nutritious dish that anybody can make for any occasion. First we're going to add a quarter pound of pork shoulder in to your mixing bowl. Next, one tablespoon of salt, one tablespoon of black pepper, one tablespoon of cumin, one tablespoon of dry oregano, followed by one tablespoon of paprika. Next one tablespoon of garlic powder, finally we're going to mix the ingredients together. Make sure the pork is finely breaded in to the mixture. Next we're going to take our baking pan. We're going to add one cup of julienne onions, spread them around, followed by your meat. Next add one piece of the pork one bit at a time. Followed by two tablespoons of extra seasoning. Next we're going to add one cup of cherry tomatoes followed by one tablespoon of juniper berries. Next we're going to add one quarter of water, going to cover in foil and then we're going to place in to a 450 degree oven for about two and a half hours to three hours. And what you'll have is a great simple and delicious dish.
