Hi, I'm Lee Samatowic. Today, we are going to make a spinach lasagna. Lasagna is usually very complicated but here's a really simple way to do it. We've sauteed about four cups of fresh spinach with a half of an onion that's been coarsely chopped. And two garlic cloves, teaspoon of basil, dried. And a teaspoon of dried oregano. A teaspoon of salt. You are going to saute those until they are all wilted together. Then you are going to add 32 ounces of spaghetti sauce. And one cup of water. Bring that to a boil and let it simmer gently after that. Meanwhile, take two cups of non-fat cottage cheese. Eight ounces of low moisture mozzarella cheese, grated. Half a cup of Parmesan cheese. And one egg. Mix those together very, very well with a few grinds of fresh black pepper. Once you have your sauce all done, then your noodles have been cooked. And we used gluten-free noodles that's why they were breaking apart so easily. But you want to definitely cook them only al dente. Layer noodles on top of a little bit of sauce. More sauce. A little bit of your cheese mixture. Another layer of noodles. And repeat that again. Sauce, cheese, noodles. Top with sauce and a little sprinkle of Parmesan cheese. Bake at 350 degrees for about 50 minutes.
