Hi, I'm Lee Samatowic, and today we're going to make a low-carb artichoke and spinach dip that is also low calorie. Artichokes and spinach are low in carbohydrates anyway, but let's make it extra special by taking down the calories as well. We took three cups of fresh spinach, sauteed with one onion, finely chopped, five to ten cloves of garlic, depending on how garlicky you like it, one can of artichoke hearts that have been drained and coarsely chopped. Saute those until it's all wilted and cooked together, then put aside. In your saute pan, put half a cup of brown rice flour, a half a teaspoon of each garlic powder and onion powder, a little salt, maybe up to a teaspoon, then slowly add a cup of rice flour while you're whisking it in carefully. As it starts to thicken, gradually add more rice flour, up to maybe three cups. Keep whisking that around until you move out all the lumps, and then add in your sauteed spinach and artichokes. Pour that into a baking dish, and bake at 350 degrees until hot and bubbly throughout, about 20 minutes.
