Hi. I'm Lee Samatowic. Today, we are going to make carrot soup with coconut milk. Carrots are rich in vitamin A and coconut milk with essential fatty acids. Lets put them together today in a delicious soup. For this delicious Asian style carrot coconut soup we took four cups of carrots that you coarsely chop. About a half to one whole onion, also coarsely chopped. About two tablespoons of peeled and chopped ginger. And saute those together with a little bit of oil in a saucepan. Add to that two cups of chicken broth or vegetable broth. One can of coconut milk. And a pinch of salt, a tablespoon of soy sauce. Bring that to a boil, simmer until done. Then place it into your blender and blend it up until it's smooth and creamy. And serve it up garnished with a little cilantro.
