My name is Nadege Fleurimond, and this is how to cook Jamaican plantains. This provides a great option for a side dish and it's a great alternative to potatoes. We'll cut the two ends of our plantains, then we will cut our plantains straight down the middle at the diagonal, then we will make a slit down our plantains and remove the skin. Once we have done that we will continue to cut our plantains the whole way through. Then we'll go over to our fire on high heat. We will add two cups of oil and wait for it to heat up. This should take about two minutes. Once your oil heats up you will add your plantains in the frying pan and let them fry. Your plantains should take about four minutes to fry. Once your plantains have reached a dark brown color, you are done. This dish provides a great source of fiber and a great source of Vitamin C. It can be enjoyed as a snack or as a side dish any night of the week.
