Hello, my name is Chef Ben Diaz, and today we are doing a layered cheese, refried beans and shredded beef enchilada. The reason is it's great for any occasion, they are sweet, delicious and meaty. So first off we'll get a quarter pot, put in two quarts of olive oil, bring that to a boil and cook the tortillas for about 30 seconds. Next let them drain. Now in a mixing bowl, add your half a cup of refried beans, your two tablespoons of cilantro, put about two ounces of your mix into your tortilla, roll it closed and put it inside your sprayed baking sheet. Next top off your enchiladas by adding about a cup of precooked shredded beef, half a cup of Jack and Cheddar mix, two tablespoons of cilantro, next put into a 450 degree oven for about 15 to 20 minutes, depending on your oven and what you will have is a great and hearty delicious meal.
