Hello, my name's Chef Ben Diaz, and today I'm gonna show you how to make cottage cheese and chicken enchiladas. It's a great dish for any occasion, and it's simple delicious to make. First get a 2 quart pot, add 1 quart of olive oil, bring it to a boil. Next add your tortillas one at a time. You're gonna need about a dozen. Cook them for about 30 second each. Next, let them drain. Next, after that, add 1 cup of cooked chicken, diced, 1 cup of cottage cheese, roll them up like little cigars. Next, spray your pan with canola oil non-stick spray. Add your enchiladas one at a time. Now pour in 1 cup of sour cream. Spread it around, make sure to coat every single enchilada adequately. Next add about a quarter cup of diced bell peppers, 2 tablespoons of cilantro, another cup of jack and cheddar shredded blend. Grab your pot, put it into a 450 degree oven for about 20 minutes, and what you'll have is a great and delicious meal.
