Hello, my name's Chef Ben Diaz. Today, we're doing a chicken chipotle cream of chicken soup enchilada casserole. The reason for making this dish, it's a great and hearty delicious dish for any occasion. So first, in a large mixing bowl add 1 cup of diced cooked chicken, half a cup of chipotle peppers diced in can, next 2 tablespoons of chopped cilantro. Add half a cup of your jack and cheddar shredded blend, mix thoroughly. Next, take about an ounce of your mix to 2 ounces, put it inside each tortilla, roll up your enchiladas, place them into your greased pan, turn them over, layer them with your about 1 and a half cups, 2 cups, of cream of chicken soup. Next, put on cilantro. Next, three slices of provolone cheese. Now place into a 450 degree oven for about 15 to 20 minutes, and what you'll have is a great delicious hearty meal.
