Hello, my name is chef Ben Diaz, and today we're making orange preserves. So the reason we are making this something sweet, something delicious and simple for the next day. Or for the same day. So first take a quart size pot. Put it over high heat. Next pour in three cups of your favorite orange juice. Let that come into a scald about thirty seconds to about a minute depending on your stove. Next pour in about two cups of granulated sugar. You can use raw sugar as a substitution if you prefer. Next pour in your gelatin. Let your gelatin sit for about 30 seconds to a minute. That should be about a tablespoons to two tablespoons of gelatin. It's unflavored. Next whisk your mixture together on high heat for about four to six minutes until the gelatin is completely dissolved and absorbed into the liquid. Now pour your mixture into a separate container and let it cool gently. Now have about a quarter cup of orange supremes in a separate container and pour in your mixture. Let it cool and sit for about two to three hours before use. Now you have a great and sweet, delicious preserve.
