Hi, I'm Kristin Koury and I'm a Personal Chef. I'm going to show you how to counter a bitter bleu cheese sauce. So, I made this sauce and I tasted it and it tasted a little bitter. Bitterness is alkaline, so to counter that, you add an acid to balance it out. You can use an acid that's like vinegar, red wine vinegar, white wine vinegar, balsamic vinegar, or juice from a citrus; orange, lemon, lime, even grapefruit. I'm going to use lemon because it works with what I'm going to use the sauce for. So, I'm going to add just a little bit; stir it around. Give it a taste; that solved it. So, adding an acid will counter a bitter taste. And I use lemon juice to counter the balance of a bitter bleu cheese sauce.
