Hi, I'm Kristin Koury. We are going to show you how to make a baked Alaskan cod. I'm gonna make a whole complete meal for you today, and I started out with some cut up potatoes, red pepper and green pepper strips, chopped up some red onion pretty roughly, and I also chopped up some fresh parsley and garlic. So we're gonna start by roasting the vegetables for a little bit. I'm gonna put our garlic and the parsley along with a little olive oil, just drizzle a little bit, salt and pepper. Gonna mix that up a little bit. The cod takes a little time that in order for everything to be cooked at the same time we're gonna start with the vegetables on their own. Put some foil on top. And we'll put it in a preheated oven that's at 350 for about 10 or 15 minutes. So now the vegetables have been in the oven for about 15 minutes. You're gonna pull them out, and we're gonna take the foil off. Oh yes. They're gonna cook a little bit longer, but you can see they're nice and hot and they smell great. Now we're gonna add our cod. So I've got the fillet already to go. I'm gonna add a little bit of olive oil. Always have to season. A little bit of pepper and a little bit of salt, and then we're gonna place it right on top of our vegetables. So while this goes back to the oven, all the wonderful garlic and herbs are gonna go through and infuse into our fish. So now it's gonna go back into the oven without the foil, for 8 to 10 minutes. Alright, I think our fish is done, let's take a look. Yes, it's opaque and the vegetables are done, looking good. With those herbs it smells wonderful. I love it when we have lots of colors on our plate. We've got orange, purple from the onions, red and green peppers. Look at that, wow, smells great. And here's our cod. Oh look at that, it's still flaky, beautiful, fantastic. And that's how you bake Alaskan cod.
