Hi, I’m Jules Shepard, and I’m here to show you how to make this easy pumpkin bread. It’s super simple, but it’s totally delicious. And, the spices actually deepen over time, so this bread is best enjoyed after several hours, or even the next day! We’re going to start with seven ounces of pumpkin puree. Add two large eggs, 1/2 cup vegetable or coconut oil, 1/3 cup water, and 1 1/2 cups sugar. Stir in your mixing bowl until it’s totally combined. In a separate bowl, add two cups of all-purpose flour. I’m using gluten-free all-purpose flour. If you’re going to do that, you need to make sure you use a blend that has a binder in it like xanthan gum. Add 1 1/2 teaspoons baking powder, a half-teaspoon of baking soda, a half-teaspoon of sea salt, one teaspoon ground cinnamon, and two teaspoons pumpkin pie spice. Wisk that together, and then add slowly to the wet ingredients. Mix until smooth. Preheat your oven to 350 degree Fahrenheit. Oil and lightly flour a loaf pan, and pour the mixed batter into the loaf pan. Smooth with a rubber spatula. Bake in the oven for 55 minutes, or until a toothpick inserted into the center comes out clean. I’ve just shown you how to make a super easy pumpkin bread that everyone will love!
