Hello, and welcome to Baking with Melissa. Today's recipe is really fun! It's an easy Christmas cookie snickerdoodle recipe. We're gonna start off with 1 cup of butter, and cream it in the mixer. And, make sure your butter is softened, of course, before you put it in the mixer. After your butter is nice and creamed together, we're gonna slowly start putting in 2 cups of granulated sugar. Next up we're going to add 2 eggs. You're gonna beat them into the mixture. And we have 1/4 of a cup of milk, doesn't really matter, doesn't really matter what kind of milk you're using, add that in. And 1 teaspoon of vanilla extract. I'll turn my speed down just a bit here so we don't have things flying all over the place. Now while that's mixing up, I'm going to just mix together my dry ingredients. In the bowl I already have 3 and 3/4 of a cup of all purpose flour, 2 tablespoons of cinnamon, and 1 teaspoon of baking powder, and we're just going to mix that together, and then we're gonna slowly add it into our butter mixture. I have my cookie dough all ready to go, and I'm gonna use this really great cookie scoop here to scoop up my dough, makes it much easier and you can always get the same amount in your cookies, so you always have the same size cookie. I'm gonna roll it, and then I'm going to place it in some cinnamon and sugar that I have already prepared in this bowl. It's about 3 tablespoons of sugar and about 1 tablespoon of cinnamon. Just roll it around, place this on your cookie sheet, and flatten it down slightly. You don't need to press it down or anything, just slightly. Again, just scoop out a little ball. Of course if you don't have a scooper, you can just make your own little balls. Roll it into the cinnamon and sugar, place it on a cookie sheet and press down. Now my temperature in the oven is set to 375 degrees, and we're gonna put it in the oven for about 12 to 14 minutes, or until golden brown. Now something I like to do, right before I put them in the oven I like to sprinkle just a little more cinnamon sugar on top, so they're extra sugary sweet.
