I'm Larry Leibowitz, Director of Culinary Operations for Guckenheimer. Today, I'm going to show you how to cook patty pan squash. Quick and easy way is to saute it right over high heat. First we're going to prep the squash, taking our patty pan after it's washed, you then take a paring knife and trim both ends. Next up is to cut them in half. One good trick I use for the knife is I hold my thumb and forefinger right at the bolster where the blade meets the handle. It gives me a lot of control over the blade. Notice how I'm just cutting with the edge or the tip of the knife blade? My other hand I have my fingers curled back with my knuckles bent so that I protect my finger tips. At this point now I'm going to bring them over to a saute pan. I'm going to heat up the saute pan, add a little bit of olive oil until it shimmers. Then I'm going to add the patty pan squash directly into that hot oil. I'm going to saute it stirring it occasionally for about 3 minutes. Season with salt and pepper and then right before it comes out of the pan I'm going to chop up some of this fresh tarragon and add it right at the end. The flavor of fresh tarragon and patty pan squash go great together. And that's a fast and simple way to flash saute patty pan squash. Thanks for joining us.
