My name is Jamie Levine from chefjamielevine.com, and today I'm going to show you how to make sauteed fruit and mascarpone. So I'm going to be using plums today. They taste good both sauteed and with mascarpone. Figs are another favorite of mine. And to get started I'm actually going to just pat them dry with a paper towel because that will get rid of excess moisture. And you do not want that because we want a nice beautiful caramelized skin. So my pan is on a medium to medium high heat. I'm going to go ahead and take some canola oil which is ideal for sauteing. And just put a little bit on the surface of the pan. When that gets hot I'm going to go ahead and just add my fruit cut side down and make sure that there's space in between each because you need that oxygen to create the browning. So that's going to go for about a minute on medium to high heat. You are going to go ahead and then flip those over for about another minute. And once that's done that is going to look like this. And to finish I'm just going to go take a little bit of my mascarpone cheese. This has been tempering at room temperature for a little bit just so it's a little softer and creamier to serve. Just put a little dollop on each. Sprinkle with a little cinnamon and you should serve this to your friends. They will love you. I'm chef Jamie Levine and thank you for watching.
