Hi, my name is Jamie Levine from chefjamielevine.com, and today I'm going to show you how to make oven caramelized vegetables. So first thing you are going to want to do is set your oven 425 degrees. High heat is crucial for this. Next thing is you are going to want to cut your vegetables. I'm going to demo this with carrots. And notice I am purposely leaving the skin on. And that's because I like the look and the kind of rustic taste that comes with that. But also because with caramelization moisture is the enemy. So when you peel a carrot you'll notice that it starts to kind of get wet and that's because all of the insides are coming to the surface. And it is creating what you do not want with this. So I'm going to go ahead and cut these. I'm doing an oblique cut but you should just cut them however you feel most comfortable. Just make sure that they are even. That's important because you don't want some cooking faster then the others. So it's going to go into my bowl. And I'm going to take a little bit of olive oil. Just coat everything. Salt and pepper. Give that a big toss. And I'm going to put this on a sheet tray. And notice I'm not putting parchment on this and that's because the direct metal gets a lot hotter then parchment. And that's key with the browning. Other important thing is you are going to want to leave space in between everything because oxygen is what creates the caramelization, that's crucial. So if you put everything smothered together it's just going to steam each other and you are not going to get the browning that you are looking for. So that can go into the oven now about 30 to 45 minutes or so. And I already have some ready. Notice they are brown on all sides, delicious golden. Perfect for your next side dish.
