How to Make an Egg Cream Drink

Hi, my name is Karl Franz, and I'm the owner and head barman of 67 Orange Street located in Harlem, New York City. Today, I'm going to show you how to make a classic egg-cream drink. One of my favorite egg-cream drinks is a classic cocktail from New Orleans. It's called the Ramos Gin Fizz. It is a really delicious drink and the one thing a lot of folks get worried about is the idea of using eggs and whether or not it's safe, whether or not there's a risk of salmonella. The actual greatest risk is through handling the egg and I suggest after you make this drink that you wash your hands. But the salmonella or any risk of anything is killed by a combination of the alcohol and the acid from the juice. We're going to start with our egg and we're using just the egg white in this cocktail. We will add a 1/2 ounce of simple syrup. A 1/2 ounce of fresh squeezed lemon juice. And a 1/2 ounce of half and half. 2 ounces of Plymouth, which is a great London Gin. And then the secret sauce in this recipe is orange blossom water. Orange blossom water is distilled from orange blossoms. And you can find it in a lot of specialty stores. We're just going to add 2 bar spoonfuls of orange blossom water. So we've just added 2 bar spoons of orange blossom water. A bar spoon is equivalent to about 1/8th of an ounce. So if you are using, say a traditional spoon, you know, you're looking to achieve about 1/8th of an ounce. Which is a little bit less than 1/2 a teaspoon. We're going to do what is called a dry shake. And a dry shake, the point of a dry shake is to really sort of emulsify the ingredients to start to kill any sort of salmonella or anything in there and prepare for when we add the ice and complete the cocktail. Okay, so now we will add our ice to the shaker. So this drink is served in a highball glass. So there's the glass. Add ice to the glass. And you see that beautiful color and the fizz that's on there. The way to finish this drink is you take your sparkling seltzer and you do a little rinse of your original shaker. Get it right around the edge of the shaker. And you'll see the layer that this makes right on top of that fizz. So hence the name fizz comes from the bubbles that we're adding now. You add your straw and there you have it. A Ramos Gin Fizz.
