Hi, I'm Kylie Deppen with Joyful Health & Wellness, and today I'm going to show you how to make a healthy snack with humus and cucumber. So, I'm going to show you two preparations that are really quick and easy. And the first one's going to be a little more elegant, if you will, if you're having a dinner party or something, it's still really quick and simple. But it's a little more involved than the second one. But I just want to say that cucumbers and humus make the perfect healthy snack, especially if you're watching your weight. Cucumbers are full of fiber and water, and they're very low calorie. So, the humus provides the good healthy fat, it's going to keep you full longer. So, this is a great snack, if you're trying to maintain or lose weight. Now, you're just going to take a cucumber that's been washed and dried, and I like to cut off the end, and keep one end as a handle. And we're going to use this little handy-dandy peeler, and I'm going to make, this is purely decorative, so you don't have to do this. But I'm going to do stripes, in about every quarter inch, I'm going to peel off the cucumber. It's really easy, but if this is too advanced, you can just do it as is and skip to the next step, which is to cut your cucumber in about one inch pieces, o.k. You don't want to get them too small, because you're going to be cutting out the center here in a second with my next favorite tool. Which is a melon ball, I guess, a melon baller really, or cucumber baller. And you're just going to go and you're going to scoop out, and I like to just rotate and it makes a perfect, little circle cup. I'll show you one more here, just circle and you can obviously eat those as well. But I've, to make things a little clean and neater, I've put my humus, this is roasted red pepper humus, by the way, you can use any flavor you like. In a little Ziploc bag and just snip the end off. So, this makes it really easy to control, you could obviously use a spoon, but this makes it really, really pretty and decorative. And you can make swirls, if you like. And there you have a beautiful presentation, if you're having friends over. And then, we're going to do one more way of presenting the humus and cucumber. And this is even easier, you can leave the whole peel on and by the way, most of the nutrients are going to be in the peel anyway. So, don't be afraid to eat the peel in the cucumber. So, this one, you're going to want to cut your slices a little bit thinner, maybe about a quarter inch, because we're going to make cucumber sandwiches. And with either one of these preparations, you can actually fill it with anything you want. You can do chicken salad, tuna salad, guacamole, get creative. This is a good one to have your kids involved in, because they can help you stuff their cucumber sandwiches. And again, if you have a spoon, just use a spoon, but this is really quick and easy. Pipe your cucumber sandwiches, I'll do one more for you, see how easy that is. And if you want to add a little flair, you can put some cayenne pepper or paprika just to give it a little extra color.
