Hi, my name is Chris Antes, personal chef with Thechefforyoutohave.com and I'm here in the Conscious Kitchen to show you a great recipe on how to make a chicken and broccoli casserole. So what I've done to start off is I've pre-cooked off some chicken breasts that I diced up and I'm going to start that off in a bowl. I'm actually going to tear it just a little bit to break that up so it will be nice and evenly spread through the casserole okay and then we're going to add some diced white onion. We've got some mushrooms here, some brown crimini mushrooms and then we'll add in some wonderful broccoli, a little heavier on that since that's the kind of casserole that we're looking for here and then last we're going to throw in some diced tomatoes and some shredded cheddar cheese. And then to kind of help hold it all together as we're baking it, we're going to add some heavy cream. Going to stick that off to the side and then next we're just going to mix that all together, okay. Now that we've got it mixed then one last step before we're going to put that into the little baking pan is to season it with a little mixture of some salt and pepper and I usually use a mixture of a one to two. I'll use one tablespoon let's say of the salt and then two of the pepper. And you can of course reverse it if you like. I just like mine a little peppery. Okay and now we'll just finish mixing it around, getting the salt and pepper spread out and then we'll put that in our little baking dish, okay. I'm pushing it down, getting it nice and flat and even to bake and then of course, I'm going to finish it with just a little bit more cheddar cheese on top and then that's going to go in the oven at 350. It's going to bake for about a half hour but it will come out golden brown, beautiful and one of the best dishes you've ever served.
