Hi, my name is Luis Sanchez and we're here at Nic's Beverly Hills, and today I want to show you how to make a Peruvian Avocado Salad. It's a very simple salad so you want to use the best ingredients available for you and we're going to start by making a dressing which is pretty much just a red wine vinaigrette but like I said, because it's such a simple recipe you want to use the best ingredients you can find. We're going to start with a little touch of mustard, a little bit of garlic, some red wine vinegar, break this down a little bit. We're not looking for a full emulsified dressing. We're just going to do a sort of like a broken down vinaigrette. Once this is nicely mixed, we're going to add some extra virgin olive oil and here you definitely want to use your good olive oil, some salt and pepper. I like adding a little touch of sugar just to balance things out and then we're going to taste, a little more salt, a little more pepper and that's it. We're going to just mix our greens in here. I found some beautiful lettuces. We're going to put a few of them in there, just toss them lightly. I've got some beautiful tomatoes as well and our avocado which is the start of the dish. I've got some cucumbers, some red onion, just finely, finely cut rings of red onion and then we're going to drizzle our dressing on top of all this.
