How to Skin a Mango

My name is Chef Egg with Cooking with Egg TV out of Baltimore, Maryland, and I'm going to teach you how to skin a mango. Alright, so we're going to slice up a mango so you can eat it at home and what I've got right here is a beautiful fresh mango. It smells really sweet and it's soft to the touch and that's how we know it's ripe and ready to rock and roll. So we're going to slice the skin off this mango and chop it up so you can eat it in smoothies, salads, all kind of good stuff. So the first thing we have to do is take a really sharp knife and chop the bottom and the top off. The next thing we're going to do is take the tip of the knife and slice around the mango. So very carefully you can slice down and reveal that beautiful sweet fruit. It's an awesome color, looks really great, so slice down and the trick is to put your knife on the next line and cut right down following the natural progression, natural line of the fruit. You slice all the way around to reveal that sweet fresh mango. So we've skinned this mango completely and so the next step is to cut the flesh from the large pit that's inside. So we're going to take the point of our knife and put it right at the top and cut down, beautiful and then cut down the other side very carefully and you've got two fillets of mango right here that look great but then you can take your knife, slice right down the sides and get the rest of that mango off and this looks really nice. So you've got all this beautiful mango but what do you do with this? Well, you can eat all the mango off the pit and it tastes awesome. Once we've sliced the skin off, we're going to cut our mangoes into small chunks. So the mango is all chopped up, it looks great and we're going to taste it. Really nice and sweet and you can use these mango chunks for smoothies, for salads, chutneys, it's got lots of Vitamin C and tastes really great.
