Hi, I'm Victoria Harris from CapMac, and today we're making mac and cheese with onions. Let's go over your ingredients. In our pot I have butter melting for our rue. We have some red and yellow onions, some white cheddar as well as some fontina that helps it stick together really well and an egg as our binder and of course our macaroni and our breadcrumb is going to be our Panko today. Let's get started. We're going to saute our onions and while those are softening up a little bit, let's get our egg ready. Give this a good mix. Okay, the onions look pretty good. Let's add our flour. Make sure everything is nicely incorporated, try to scrape up any bits at the bottom of the pan, okay. It will look pretty dry at first but as soon as you add your milk you'll see how it will thicken up nicely. So our milk has been heating in the back. Okay and let's, we want to slowly temper this in. You want to be consistently whisking. At this point you want to have your heat at about medium. Use our rubber spatula to scrape around the edges. Rue has a tendency to stick to the bottom of the pan so you want to do anything you can to prevent that, especially in the beginning stages of the cooking. So while that's coming together let's give it a quick season with some fresh cracked black pepper, some salt, give that another stir. See it's thickened up nicely. It coats the back of the spoon. You can run your finger through it. We're going to add our elbows, blend that all together. We're going to add our cheeses in stages so our fontina. Cheese has a high water content so it's important to add it in stages to not overwhelm the your bechamel. Let's add the second addition, let's add our cheddar. Okay at this point let's turn off the heat. We're going to add our binder. Baked mac and cheese makes everything stick together, give it a quick stir. We want to give it a dash more pepper, our pre-oiled pan, spoon this in. We want to finish with a bit of Panko. We want to put this in a 350 degree oven for 25 or 35 minutes until the top is nicely brown and it's bubbling around the corners. Okay it's been about 25 minutes. Our mac and cheese with onion should be ready. And here you can see it's nicely tanned and brown and it's bubbling around the corners.
