Hi, I'm Victoria Harris from Capmac, DC, and today we're making 5 cheese mac and cheese. Lets go over our ingredients. In my pot here I have butter melting, some flour, I'm going to toss this in to get our roux started. Give this a quick whisk. Turn down the heat. Here I have some cayenne pepper, and this is Dijon mustard. These are going to be our seasonings. Add these in with the roux just to make things a little easier. Turn the heat down a little bit. Okay. While that's coming together I'm going to add our milk that's already been hot. I"m going to temper this in slowly. I'm going to be continuously whisking, get out all the clumps, because the roux comes together relatively quickly. Okay. Put the heat to about medium, give it a quick season for it to season in stages. While this flour's cooking up lets go over our cheeses. We're going to use parm today, use white and yellow cheddar, a little fontina, and a little taleggio. So we're going to turn this down now that it's come up to the right consistency I'll turn it down to low because you don't want to overcook your bechemel. Add our pasta, give it a quick stir. Rubber spatulas are handy at scraping the bottom of the pots and getting into the corners to make sure nothing's sticking to the bottom. Set our heat to low. Add our cheeses, our cheddar, our parm, because of the high moisture content with cheese we want to add it in stages. You don't want to overwhelm your base sauce. Add our taleggio. That looks good. You don't need to have a lot of heat at this point, the cheese will pretty much melt by itself. Okay lets readjust seasoning. Easy on the salt. Cheese is already very salty. Okay, give it another quick mix. Nice and gooey. Lets dish this up. A little messy. And if you've been to DC, in true CapMac fashion I'm going to finish it with a little bit of yellow cheddar and Cheese-Its.
